INGREDIENTS:

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper to taste

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 pint cherry tomatoes, halved

  • 1/2 cup fresh basil leaves, torn

  • 8 ounces (225g) fresh mozzarella, sliced

  • Balsamic glaze, for drizzling (optional)

PREPARATION:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Season Chicken: Season the chicken breasts with salt and black pepper on both sides.

  3. Sear Chicken: In an oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown.

  4. Add Garlic and Tomatoes: Add minced garlic to the skillet and sauté for about 1 minute until fragrant. Add the halved cherry tomatoes to the skillet.

  5. Bake in the Oven: Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the chicken is cooked through.

  6. Add Basil and Mozzarella: Remove the skillet from the oven. Sprinkle torn fresh basil over the chicken and place slices of fresh mozzarella on top of each chicken breast.

  7. Broil Until Cheese Melts: Turn on the broiler and place the skillet back in the oven for an additional 3-5 minutes, or until the mozzarella is melted and bubbly.

  8. Drizzle with Balsamic Glaze (Optional): If desired, drizzle the dish with balsamic glaze for extra flavor.

  9. Serve Hot: Serve the Tomato, Basil, and Mozzarella Chicken hot, either on its own or with a side of your choice. Enjoy the delicious combination of juicy chicken, burst tomatoes, fresh basil, and gooey melted mozzarella!

NOTES: 

Recommended to cook this in this cast iron pre-seasoned skillet.
