  • 1.5 pounds (680g) boneless, skinless chicken thighs, cut into bite-sized pieces

  • 1/2 cup low-sodium soy sauce

  • 1/4 cup honey

  • 2 tablespoons rice vinegar

  • 1 tablespoon sesame oil

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, grated

  • 1-2 teaspoons Sriracha sauce (adjust to taste for spice level)

  • 1 tablespoon cornstarch

  • 2 tablespoons water

  • 1 tablespoon vegetable oil

  • 1 green onion, sliced (for garnish)

  • Sesame seeds (for garnish)

  • Cooked rice or quinoa (for serving)




  1. Marinate Chicken: In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and Sriracha sauce. Add chicken pieces to the marinade and let it marinate for at least 15 minutes.

  2. Prepare Sauce: In a small bowl, mix cornstarch with water to create a slurry. This will be used to thicken the sauce later.

  3. Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Remove chicken from the marinade (reserve the marinade) and cook in the skillet until browned and cooked through.

  4. Make Sauce: Pour the reserved marinade into the skillet and bring it to a simmer. Add the cornstarch slurry and stir continuously until the sauce thickens, coating the chicken.

  5. Garnish and Serve: Once the sauce is thickened, remove from heat. Garnish with sliced green onions and sesame seeds.
