Salad Base:

  • 2 cups cooked quinoa

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 head romaine lettuce, chopped

  • 1/2 cup fresh parsley, finely chopped

Sesame Dressing:

  • 3 tablespoons sesame oil

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon grated ginger

  • 1 clove garlic, minced

  • Salt and pepper to taste

  1. Cook Quinoa:

    • Rinse 1 cup of quinoa under cold water.

    • In a saucepan, combine quinoa with 2 cups of water.

    • Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.

    • Allow it to cool to room temperature.

  2. Prepare Vegetables:

    • While the quinoa is cooling, chop the cherry tomatoes, cucumber, romaine lettuce, and fresh parsley.

  3. Make Sesame Dressing:

    • In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey (or maple syrup), grated ginger, minced garlic, salt, and pepper.

    • Adjust the seasoning to your taste.

  4. Assemble the Salad:

    • In a large bowl, combine the cooked quinoa, cherry tomatoes, diced cucumber, chopped romaine lettuce, and fresh parsley.

    • Drizzle the sesame dressing over the salad.

  5. Toss and Serve:

    • Gently toss the salad until all ingredients are well combined and coated with the dressing.

    • Taste and adjust the seasoning if needed.

  6. Serve:

    • Divide the quinoa salad into individual serving bowls or plates.

    • Optionally, garnish with additional fresh parsley or sesame seeds.
