Prep Time:

Cook Time:

20 min

  • 1 pound (450g) large shrimp, peeled and deveined

  • 2 cups orzo pasta

  • 3 cups chicken broth

  • 4 cloves garlic, minced

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 1/2 cup dry white wine (optional)

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 1/4 cup fresh parsley, chopped

  • Salt and pepper to taste

  • Red pepper flakes (optional, for a hint of heat)

  1. Prepare the Orzo: In a large pot, bring the chicken broth to a boil. Add the orzo pasta and cook it according to the package instructions until al dente. Drain the orzo, reserving about 1/2 cup of the cooking liquid. Set the orzo aside.

  2. Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and cook for about 1 minute until fragrant. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the cooked shrimp from the skillet and set them aside.

  3. Prepare the Lemon Butter Sauce: In the same skillet, add the dry white wine (if using), lemon zest, and lemon juice. Allow it to simmer for 2-3 minutes, reducing the liquid by half. Stir in the unsalted butter and let it melt into the sauce, creating a creamy and luscious texture. Season with salt and pepper to taste, and add a pinch of red pepper flakes if you desire a touch of heat.

  4. Combine the Orzo and Shrimp: Add the cooked orzo to the skillet with the lemon butter sauce, tossing to coat the orzo evenly. If the mixture is too dry, add some of the reserved pasta cooking liquid.

  5. Add the Shrimp and Garnish: Return the cooked shrimp to the skillet with the orzo and gently combine everything. Allow it to heat through for a couple of minutes. Finally, stir in the chopped fresh parsley.

  6. Serve: Transfer the Lemon Garlic Butter Shrimp and Orzo to plates, garnish with additional parsley and lemon slices if desired, and serve hot. Enjoy!
