Carrot Ribbon Salad

A large white bowl of Carrot Ribbon Salad

Very fast, yet interestingly looking, this carrot salad will add a lot of color to your table.

INGREDIENTS:

  • 7 Long Carrots

  • 1 teaspoon Curry Powder

  • 2 tablespoons Olive Oil

  • 1 tablespoon Honey

  • 1 Lemon

  • Salt

  • Freshly Ground Black Pepper

  • Small Bunch Cilantro

PREPARATION:

  1. Wash the carrots and peel them.

  2. Then using a veggie peeler slice up all the carrots into ribbons. Place into a bowl.

  3. In a small saucepan combine oil curry powder and honey.

  4. Cook for a couple of minutes until sizzling.

  5. Pour the dressing over the carrots and then zest a lemon on top

  6. . Squeeze the juice from the lemon add salt and pepper and mix together.

  7. Add salt and pepper to taste. Garnish with some chopped cilantro. Enjoy!
