INGREDIENTS:

  • 1 pound (450g) ground beef

  • 4 cups potatoes, peeled and diced into 1/2-inch cubes

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 bell pepper, diced

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme

  • 1/2 teaspoon cayenne pepper (optional, for added heat)

  • Salt and black pepper to taste

  • 2 tablespoons vegetable oil

  • 4 eggs (optional, for serving)

  • Chopped fresh parsley, for garnish

PREPARATION:

  1. Cook the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 5-7 minutes until they are just tender. Drain the potatoes and set them aside.

  2. Brown the Beef: In a large skillet or cast-iron pan, heat vegetable oil over medium-high heat. Add the ground beef and cook until it's browned, breaking it apart with a spoon as it cooks.

  3. Add Aromatics: Add the chopped onion and minced garlic to the browned beef. Sauté for about 3-4 minutes until the onion is softened.

  4. Incorporate Potatoes and Seasonings: Add the parboiled diced potatoes to the skillet. Season with paprika, dried thyme, cayenne pepper (if using), salt, and black pepper. Mix well to combine.

  5. Cook Until Crispy: Allow the mixture to cook without stirring too often to allow the potatoes to develop a crispy exterior. Stir occasionally and cook for about 15-20 minutes until the potatoes are golden brown and crispy.

  6. Add Bell Pepper: Stir in the diced bell pepper and cook for an additional 3-4 minutes until the pepper is tender-crisp.

  7. Adjust Seasoning: Taste and adjust the seasoning if needed. You can add more salt, pepper, or spices according to your preference.

  8. Optional: Serve with Eggs: In the same pan or a separate pan, cook eggs according to your liking (fried, poached, or scrambled).

  9. Garnish and Serve: Garnish the Beef and Potato Hash with chopped fresh parsley. Serve hot, with optional eggs on top if desired.

NOTES: 

Recommended to cook this in this cast iron pre-seasoned skillet.
