TUNA NOODLE CASSEROLE

This is a very flavorful and not boring Tuna Casserole. Make your dinner special with this easy dish!
Ingredients:
1 box of Pasta (I used Farfalle)
1 Yellow Onion (diced)
5 Cloves of Garlic (minced)
3 Stalks of Celery (diced)
1/4 cup Flour (I used Oat Flour you can use any other kind of flour)
1 cup Milk or Cream (I used Whole Milk you can use plant based)
1 cup Chicken Stock
2 cans Tuna (broken into small flakes)
1 Zucchini (diced)
1 cup Frozen Peas
1 Cup Parmesan Cheese (shredded)
1/4 cup Almond flour or Breadcrumbs
Small Bunch of Parsley
Oil for Frying (I used Olive Oil)
Directions:
Boil the pasta.
While the pasta is cooking, heat a skillet and add some olive oil to it for frying. Once it's hot add the onion and celery. Saute until onions get almost translucent and start browning. Add Garlic and move it around for a minute or two (be careful it burns fast).
Add the flour to the pan and brown it for a minute or two. Slowly pour in the milk while using a whisk to mix stir everything to break up any clots of flour. Slowly add the stock, keep on stirring it. The creme will start to thicken in a couple of minutes.
Once the sauce thickens add tuna fish, zucchini, and frozen peas. Mix everything together and add cooked drained pasta. Sprinkle with parsley and half of the cheese. Mix well together. Check for salt. Add some pepper to your taste.
Now decide if you are going to use the same skillet you were using or you need to move the everything into an oven safe dish (I was cooking in an enamel cast iron skillet so I just let the pasta stay there). Preheat the oven to 375 F. On top of pasta with sauce add what is left of the cheese and 1/4 cup almond flour (or bread crumbs). Cover with foil or lid and place into the oven. Let cook for 15 minutes covered and then remove the cover and let bake for another 10-15 minute uncovered until it browns a little.
Garnish with some parsley and enjoy!
TIPS:
You can any other kind of vegetables to the dish such as: green beans, broccoli, or mushrooms).
This is a perfect dish to be frozen and cooked later. Just cover the oven safe dish in a couple of layer of foil and then plastic wrap before freezing it. Make sure to defrost it before baking it. Bake for an hour at 375 F covered and then another 10 minutes uncovered for it to brown.
