Liver Pancakes

My Mom gave me this recipe when my daughter was staring to eat solids. She used to make this for me when I was a kid. According to my Mom, she came up with this recipe for my older sister when she was a baby. She later found out that most of the kids like it as long as you don't tell them what it is made of. My Mom passed it on to me and it became a go to recipe when it comes to feeding my little picky eater.

Liver is known to have a lot of iron, zinc, vitamin A and folic acid. In ancient times it was believed that the liver had to be eaten first after killing the prey because it was said to hold all the strength of the enemy. I often try to cook liver for all the good qualities. The pancakes is one of the only ways to make a kid eat it.

Ingredients:

- 8 oz Liver (I used chicken liver)

- 1 Egg

- 1/2 Onion

- 3 TS Cream of Wheat

- Garlic Powder

- Umami Spice from Trader Joe's

- Salt

- Olive oil (for cooking)


Directions:

- Peel and chop the onion.

- Add all the ingredients to the blender and grind them up into a smooth batter like substance.

- Warm up the pan add a decent amount of oil and pour Table Spoons of the "batter" onto it like you would when making pancakes.

- Wait for the edges to slightly start to brown (about a 1-2 minutes) and flip the liver pancakes on the other side.

- Fry for another minute or two; and Voila they are ready to be put on the plate. Enjoy!



Tips:

-I usually serve it with sour cream. My little one loves it.

-If cooking for a grown up you can add any herbs you like (I used to add dill and parsley).
